It’s been a minute since we talked about what we’re eating, what we’ve been cooking, and the snacks we’ve been buying. So with this mini heatwave that (at time of writing at least) we’re expecting in the UK, I figured it was a good time to think about summer eats.

What are you cooking/buying/ordering for takeout? What’s your favourite ice cream brand you can get in the supermarket, or do you have a hot tip on a great local ice cream spot? Are you making your own iced coffee, or buying it pre-made? What other summer eats do the CIHAS crew need to know about right now?

I’ll go first!

We are growing hella courgette in the community garden so I’ve been making this 1-bowl zucchini bread (with chocolate chips) and the courgette farinata from Ruby Tandoh’s Cook As You Are (affiliate link). It’s basically a giant chickpea pancake that we eat with garlic aioli. Avery eats neither the zucchini bread or the pancake, to be clear.

I’m obsessed with this super easy Crispy Gnocchi with Burst Tomatoes and Mozzarella from NYT cooking (gift link). I use the I Am Nut OK Notzerella or the Julian Bruno Superstracchia for a vegan alternative to cheese. I can’t wait to make this with tomatoes from the garden (which will hopefully ripen now we have some sun!).
